Prepare the taco vegetables and inserts and set aside. Pat the fish dry and cut into chunks. Season with salt. Place generously in flour on a plate and mix with salt and pepper. Dredge the fish pieces in the flour, coating well. Heat 1/2 inch of oil in a medium skillet. Over medium-high heat, fry the fish pieces for a few minutes, turning once. Remove from the heat and place them on the prepared stencils. Top each stencil with the vegetables and chili mayo.

All categories of food produced in Mexico are regulated and controlled. Meats, fruits and vegetables are produced all year round depending of the region or crops periods, 1-2 a year. The Mexican government tries its best to avoid the contamination of GMO’s grains or seeds and the use of pesticides.

If you live outside of great metropolis, you are more likely find markets with regional producers. Where there is no need to “marked/labeled” as non-GMO or organic. It is not likely to have farmers to use pesticides due to the small productions.

Large super markets need large suppliers and means of large productions / controls / consistent supplies / massive distribution. Those producers need to have a production on steroids. Most are produced in closed environment. (green house and hydrophobic)

Support your local farmers! Heat Fresh, better food quality and vitamin content.

Premios Ariel la historia fílmica de Puerto Vallarta

La elección de Puerto Vallarta, como sede de la ceremonia, forma parte de la estrategia de la Academia Mexicana de Artes y Ciencias Cinematográficas para impulsar la industria cinematográfica nacional.

‘Sujo’, de Fernanda Valadez y Astrid Rondero, ‘Corina’, de Úrsula Barba Hopfner y ‘Pedro Páramo’, de Rodrigo Prieto, encabezan las postulaciones.

En el marco del anuncio —en la Cineteca Nacional México— de nominaciones para la edición número 67 del Ariel, Armando Casas Pérez, Director de la Academia Mexicana de Artes y Ciencias Cinematográficas (AMACC), enfatizó que celebrar la gala en Puerto Vallarta fortalece el papel de Jalisco como epicentro del cine y forma parte de la estrategia de difusión.

Tras dar a conocer la lista de nominaciones que encabezan las películas “Sujo”, de Fernanda Valadez y Astrid Rondero; “Corina”, de Úrsula Barba Hopfner; y “Pedro Páramo”, de Rodrigo Prieto; la Secretaria de Turismo del Gobierno del Estado de Jalisco, Michelle Fridman Hirsch, y Casas Pérez, destacaron la relevancia de celebrar la ceremonia de entrega por tercera ocasión consecutiva en Jalisco.

La Secretaria señaló que la conexión entre Jalisco y la industria audiovisual es tan estrecha, que resulta imposible comprender al estado sin su papel en el cine, y viceversa.

También recalcó que Jalisco es la única entidad del país con una política pública específica de incentivos a las filmaciones, como el Cash Rebate, y cuenta con Filma Jalisco, una estructura dedicada a respaldar al sector desde lo académico, lo industrial y lo fiscal.

El objetivo, dijo, es atraer producciones nacionales e internacionales que antes se iban a otras regiones o países.

“Qué importante es que desde los gobiernos generemos las políticas públicas de impulso, los estímulos, en estas nominaciones vemos muchas películas que fueron filmadas en Jalisco, eso no es fortuito (…), es porque hay recursos y estímulos que hacen que las películas no se vayan a otros estados, que no se vayan a otros países, sino que se queden en Jalisco y después estén nominadas a una ceremonia como ésta”, aseguró Michelle Fridman.

Armando Casas señaló que la AMACC comprobó un mayor alcance y proyección de la ceremonia al adoptar un formato itinerante.

“El año pasado pudimos ver que esto nos ha dado un alcance (…) Creemos que precisamente este año, gracias además a la alianza estratégica que tenemos con el Gobierno del Estado de Jalisco, podremos tener un alcance todavía mayor”, dijo.

Michelle Fridman señaló que descentralizar la ceremonia del Ariel permite acercarla a nuevos públicos, tanto geográficos como mediáticos, gracias a su difusión en televisoras públicas, de paga y plataformas digitales.

La ceremonia número 67 se llevará a cabo en el Centro Internacional de Convenciones de Puerto Vallarta el 20 de septiembre y será transmitida por Jalisco TV, TNT HBO Max, y Canal 22 y retransmisiones en Canal Once, capital 21 Mexiquense TV y Suma TV.

Zona Romantica in Pueto Vallarta

Long gone are the days that Puerto Vallarta was a gift shop and a couple of cheap bars. The new city is vibrant, cultured and ready to welcome a new breed of traveler and adventurers.

I arrived in Puerto Vallarta more then 2-1/2 decade ago, life was simpler. Tourists stuck to the beachside : the Malecón, the Zona Romántica. The marina was very lonely. There was the cobblestone streets of the Centro, the ocean views and the restaurants lining the Malecon and Los Muertos Beach. I moved here in 1997, I have watched Puerto Vallarta grown and I profoundly immersed myself.

The city’s tourism geography has exploded far beyond the usual zones, thanks in part to shifting traveler preferences, new resident demographics and major infrastructure investments. From foodie-favorite neighborhoods to far-flung mountain villages, the “new” Puerto Vallarta is a sprawling, layered, international city.

The rise of new neighborhoods

Versalles, I lived in for 22 years, from 1998-2019. A formerly sleepy residential neighborhood that has transformed into the city’s culinary darling. Think cozy bistros, gourmet bakeries, taco stops. The trendy neighborhoods now include Versalles. These are places with strong culinary identities, walkable layouts and a sense of authentic Vallarta life.

Nearby, 5 de Diciembre offers that same local slice of life with a side of sea views. Creeping up the hills just north of the Centro, the neighborhood has drawn in both visitors and full-time residents with its colorful streets, hidden taquerias and walkability.

There is definitely a growing interest among visitors to explore more than Marina Vallarta, Downtown and the Zona Romántica.

Neighborhoods gaining traction including Fluvial Vallarta, with its wide boulevards and family-friendly cafes; Emiliano Zapata, the oldest neighborhood in town and home to classic markets and mezcal bars; and El Palmar de Aramara, an area poised to become a culinary destination in its own right, with its proximity to the cruise terminal and local market.

As someone who has lived in neighborhoods all over the city, I have wandered these “newer” neighborhoods for years and I can say the energy is different. They are less touristy and more lived-in, though their evolution is happening at a lightning pace.

In recent years, the city has experienced an increase in housing and tourist apartment demand that has expanded to new neighborhoods. This trend skyrocketed during the pandemic and hasn’t slowed down.

Puerto Vallarta gets around 5+ million tourists per year.

As demand for longer stays and remote work setups surged, so too did the development of boutique condos, co-living spaces and Airbnb ready units, especially in outlying areas. This demand has prompted a wave of infrastructure upgrades. Roads have been paved, sidewalks widened, bike lanes installed.

Puerto Vallarta has become a staple of the cruise ship itinerary.

Puerto Vallarta’s evolution is not limited to urban neighborhoods. More travelers are trading beach loungers for boots and backpacks, seeking out off-the-grid experiences in the greater Banderas Bay and Sierra Madre regions. In the Sierra Madre highlands, the Pueblos Mágicos of Mascota and San Sebastián del Oeste offer cool mountain air, Spanish architecture and coffee farms worth the trek.

Among the top draws is Yelapa, a boat-accessible fishing village with a bohemian soul. Think eco-retreats, cliffside yoga decks and no cars in sight. For those who crave even more solitude.

With the expansion of options comes a broader audience. The city now attracts a diverse mix of residents and long-stay travelers who are younger, more mobile and more entrepreneurial.

1 1/2 oz Puerto Vallarta Tequila
1/2 oz Potter's Triple Sec
1 oz Lime juice or Puerto Vallarta Sweet and Sour
Salt around the rim (Optional)
Lime to garnish

Blend or just pour over ice and enjoy!

Margarita Recipe

I think it’s the fresh limes that make them so good in PV (no mixes!)…

A margarita is just tequila, lime juice, a little simple syrup, and an orange liqueur.

It is as simple as 1 2 3. One part fresh squeezed lime juice. Two parts orange liquor. Three parts tequila.

In Vallarta I buy Controy for the orange liquor and Azul tequila. You don’t want to waste expensive tequila on a margarita.

That is my recipe too but I make them ahead a bit so that the ice has a chance to melt a bit otherwise they’re just too strong.

Yum!

Fresh lime and a decent ( not great Tequila ). El Jimador, Cazadores, Centenario. Anything cheaper than them will not feel good the next day.

The biggest difference between the taste of margaritas at home vs. PV is the limes. My opinion anyway. If you kind find the little key limes at home (easier than it used to be) by all means use them.
