About Tamales Mexican Cuisine Puerto Vallarta

Tamales were Mesoamerica’s first corn-based dish. Tamales’ origin comes from the ancient civilizations in Mexico as early as 8000 BC. Although the exact history is fuzzt at best, many historians believe that the Aztecs invented tamales ten thousand years ago. Tamales were a portable, protein-rich snack that Aztec soldiers could bring into combat with them.

Hunters could also carry them into the field. Women were in charge of making tamales. Tamales were produced by women. The laborious procedure was part of their daily routines and essential religious traditions. Tamales were initially cooked in a subterranean fire over hot ashes. When Spanish conquistadors arrived with pots and pans, women began boiling the corn-wrapped parcels. The Spanish also added other flavors to the veggie treats, such as pork and grease.

What are Tamales?

So, exactly what is a tamale? Tamales are created from masa, which is ground corn wet with water. Wrapping the masa in whatever leaves are available, such as corn husks, banana leaves, or even tree bark, is traditional. The wrapping gives the tamale its name, which originates from the Náhuatl word tamalli, which means “wrapped.”

Delicate meats, aromatic spices, and precisely cut veggies are stuffed into the tender masa. There are as many flavors of tamale filling as there are families that make them, as each cook puts her own spin. One of the most well-known variations is pork tamales with red chilis, but other fillings such as shredded chicken, black beans, and beef are also popular.

The secret is to use your imagination; There are even turkey tamales available! Tamales have come a long way since the early Aztecs ate them during battle. The use of flavorful fats and meats such as lard and pork butt has increased the flavor of the tamale.

How to Make Tamales at Home Whatever type of tamales you prepare, keep in mind that the process might be time-consuming. The Oaxacan style, for example, has 120 distinct steps! The proportion of masa to filling is critical. You want to be able to taste the luscious contents, not simply the dough, while making a superb tamale at home. A 50/50 split is ideal.

Masa has a custardy feel when added into a dough. You have to combine the corn dough with spices and lard, and your goal is to get a peanut butter-like consistency with nothing sticking to the sides of the bowl. You are ready to go when the dough is no longer sticky.

While you are kneading the dough, soak the corn husks in water. Trimming the husks is essential for making properly sized tamales. A decent length is about five inches. Next, spread two teaspoons of masa on each corn husk with a spatula or putty knife.
Popular Tamale Fillings

When it comes to the pork filling, experts advocate using it cold. Place it in a line down the center of the husk to prevent it from running to the edges during cooking. Whether you stuff your tamale with soft meat, green chiles, potatoes, and garlic, or shredded chicken, corn kernels, and red sauce, the possibilities are as limitless as your imagination.

Pork with red chile sauce features pork butt or shoulder, as well as spices like oregano and cumin. A favorite topping is a spicy red chile sauce. Another popular one is black beans with cheese.

How to Assemble a Tamale

Fold both sides of the tamale and tuck the tail beneath to assemble. Cook them seam side up to prevent the filling from falling out. Bring the tamales to a boil first, then reduce to a low heat for about 40 minutes. Tamales are ready when the husk readily separates from the masa and filling. The best part, of course, will be sitting down to enjoy them, especially with your friends and family.

Tacos of many and any thing

Very few things identify the Mexican popular gastronomy as tacos. The ever-popular dish consists on a folded tortilla filled with… whatever ingredient comes to your mind. From fancy lobster to humble salt, any ingredient can be a part of the taco.

Tacos are descendants of the “quauhtaqualli” native from the Mexican central highlands. Obviously, Spaniards could not pronounce the name and called them taquallis. From this last expression is that tacos took their present name. Today, they have a plethora of last names:

de cabeza, prepared with each and every part of the pork’s head: brains, cheek, tongue, lips and else
de carnitas, Jalisco’s and Michoacan’s are unsurpassed
dorados, deep-fried to make tortilla hard
de barbacoa, with meat cooked inside maguey leaves
al pastor, with Lebanese-style marinated pork
de pescado, Baja’s fish are the best ones
de canasta, with hot broths sweating inside the basket

The original taco Hernán Cortés’ troops feasted with was surely of xoloscuintle and guajolote, the native name of turkey. The garnishes were the vegetables then available in the New World.

One thing is sure: Cortés’ mercenaries didn’t know back then the proper technique to eat tacos neatly. Here it is: thumb, index and middle fingers hold the tortilla by the upper part to keep it from unfolding. The ring and pinky fingers hold it from beneath to avoid ripping and dropping. If we eat while standing, the body’s tilting ahead is of great importance to watch for drippings.

En el año de 1956 un grupo de amigos vallartenses se reúnen con el Ingeniero Juan De Dios De La Torre, que motivado por la experiencia de haber obtenido un primer lugar de pesca en Nueva Zelanda, los convence de organizar una competencia para atrae pescadores de otras partes de la República, y constatarán la abundancia de pesca en la Bahía, estos amigos, que fueron los socios fundadores, todos ellos empresarios y gente visionaria, pioneros de varios negocios, (tres de ellos fueron Presidentes Municipales), creyeron que la pesca deportiva podría ser el detonante para que nos visitaran los Turistas. https://www.facebook.com/FishVallarta https://clubdepesca.org.mx

Desde el primer torneo tuvimos participantes de los Estados Unidos, así desde 1957 se le nombró ambiciosamente “Torneo Internacional de Pesca de Pez Vela”. De la mano de nuestro más fuerte patrocinador (Mexicana de Aviación), se promovía Puerto Vallarta turísticamente como un destino de pesca, este torneo fue el primer esfuerzo de promoción de esta ciudad y sigue siendo nuestro principal objetivo, este Club desea poner a Puerto Vallarta en el mapa internacional de la pesca, junto a otros destinos como Hawái o Los Cabos, a los cuales no tenemos nada que envidiarles.

La Pesca Deportiva deja una derrama importante de riqueza, muy por encima de otros atractivos turísticos de Puerto Vallarta, este turismo de Pesca repite sus visitas de acuerdo a las temporadas de arribazón de las diferentes especies, ya que la pesca se puede practicar todo el tiempo.

El Club de Pesca de Puerto Vallarta y su emblemático Torneo de Pesca ha persistido hasta el presente por 60 años porque fue construido sobre bases muy firmes –Efrén Calderón me dijo hace poco […] el Club de Pesca no puede morir, su historia lo sostiene […]–, hombres honestos que primero formaron una familia y fincaron un patrimonio con trabajo continuo, persistente, sin ventajas ni fraudes –no como hoy se estila que con frecuencia algunos amasan fortunas formidables de la noche a la mañana–.

Al fundar el Club, edificaron una sombrilla institucional para la pesca deportiva. Empero, me atrevo a reflexionar que falta crear un premio especial para honrar el deporte de la pesca por el deporte per se; el premio aunque valioso, debe ser en esencia simbólico, La Guirnalda de Oro a la Pesca Deportiva. Este premio, a las especies que hoy se promueven en el torneo, tendrán que ser capturadas con una línea de un máximo 30 libras.

Los premios deberían ser entregados a los ganadores en ceremonia solemne, en lugar emblemático de Puerto Vallarta, por nuestras mujeres más bellas, quienes además obsequiarían un beso a los ganadores; todo en memoria de aquella bella época romántica de finales de la década de 1950 cuando fue concebido el Club de Pesca de Puerto Vallarta. Apuesto un peso a quien acepte el reto, –porque eso quiero ganar– que muchos concursarán igual que en los viejos tiempos, sólo por el placer de pescar; para constatar que quien conquista esa clase de hazaña alcanza el honor porque el honor merece.

Mandarin Oriental to debut in Mexico in 2028

Luxury hotel group Mandarin Oriental has announced its next launch in Mexico in 2028, as part of its expansion in the Americas. The new resort, Mandarin Oriental Kanai, will be located in the Riviera Maya and promises to raise hospitality standards in the region.

This exclusive project will feature 120 rooms and suites, all equipped with private pools and spectacular views of the Caribbean Sea. In addition, the resort will include 50 luxury residences, three swimming pools, multiple dining options, a world-class spa, a kids’ club and a varied range of activities for all ages.

Laurent Kleitman, CEO of the Mandarin Oriental group, highlighted that the resort will be uniquely integrated into the natural and cultural environment of the region: “This resort will offer an unparalleled luxury experience, with a design that pays homage to local culture and art. We have put our guests at the center of every detail, ensuring legendary service and exceptional experiences.”

The resort will occupy just 9% of a 680-acre property on the Yucatan Peninsula, surrounded by pristine jungle and protected mangroves. Mexico City-based Migdal Arquitectos will be in charge of the design, which will incorporate elements of Mayan architecture, while New York studio William Gray will be in charge of creating interiors that blend with the natural environment, generating a style that combines the indoor with the outdoor.

Renowned Mexican artist Bosco Sodi will be the artistic curator of the project, contributing his vision to create spaces that invite contemplation and connection with the environment.

Mandarin Oriental Kanai will offer activities for both children and adults, including water sports, a residents-only beach club, and various culinary experiences that will fuse international cuisine with local dishes, using regionally sourced ingredients. The spa will be part of a larger wellness center, with an indoor pool and outdoor treatment options.

En 1956, un groupe d’amis de Vallarta a rencontré l’ingénieur Juan De Dios De La Torre qui, motivé par l’expérience d’avoir obtenu la première place dans la pêche en Nouvelle-Zélande, les a convaincus d’organiser un concours pour attirer des pêcheurs d’autres régions du pays. Ces amis, partenaires fondateurs, tous entrepreneurs et visionnaires, pionniers de diverses entreprises (trois d’entre eux étaient présidents municipaux), croyaient que la pêche sportive pouvait être un déclencheur pour que les touristes nous visitent.

Dès le premier tournoi, nous avons eu des participants des États-Unis, c’est pourquoi depuis 1957, il a été nommé de manière ambitieuse « Tournoi international de pêche au voilier ». Avec l’aide de notre commanditaire le plus important (Mexicana de Aviación), Puerto Vallarta a été promue comme destination touristique de pêche. Ce tournoi a été le premier effort de promotion de cette ville et continue d’être notre objectif principal. Ce Club veut mettre Puerto Vallarta sur la carte internationale de la pêche, aux côtés d’autres destinations comme Hawaï ou Los Cabos, qu’on n’a rien à envier.

La pêche sportive laisse une richesse importante, bien au-dessus des autres attractions touristiques de Puerto Vallarta. Ce tourisme de pêche répète ses visites selon les saisons d’arrivée des différentes espèces, car la pêche peut être pratiquée à tout moment.

Le Club de pêche de Puerto Vallarta et son emblématique tournoi de pêche existent depuis 60 ans jusqu’à présent parce qu’ils ont été construits sur des bases très solides – me disait récemment Efrén Calderón […] le Club de pêche ne peut pas mourir, son histoire le soutient [… ]–, des hommes honnêtes qui ont d’abord fondé une famille et construit un héritage par un travail continu et persistant, sans avantages ni fraude – contrairement au style d’aujourd’hui où certains amassent souvent du jour au lendemain de formidables fortunes –.

En fondant le Club, ils ont créé un cadre institutionnel pour la pêche sportive. Cependant, j’ose penser qu’un prix spécial est nécessaire pour honorer le sport de la pêche sportive en soi ; la récompense, bien que précieuse, devrait être essentiellement symbolique, la Guirlande d’Or de la Pêche Sportive. Ce prix, pour les espèces promues aujourd’hui dans le tournoi, devra être capturé avec une ligne d’un maximum de 30 livres.

Les prix devraient être remis aux gagnants lors d’une cérémonie solennelle, dans un lieu emblématique de Puerto Vallarta, par nos plus belles femmes, qui embrasseraient également les gagnants ; tout ça en souvenir de cette belle époque romantique de la fin des années 1950, lorsque le Club de pêche de Puerto Vallarta a été conçu. Je parie un peso sur celui qui relèvera le défi – parce que c’est ce que je veux gagner – que beaucoup s’affronteront comme autrefois, juste pour le plaisir de pêcher ; prouver que n’importe qui qui fait ce genre d’exploit obtient l’honneur parce que l’honneur est mérité.

The government of Puerto Vallarta continues to reinforce security measures with the installation of more than 120 alert and video surveillance posts in various strategic points of the city. These devices, known as Totems, will allow a faster response to emergencies and will contribute to the reduction of crime, especially in areas where high crime rates have been recorded.

The National Survey of Urban Public Security, carried out by the National Institute of Statistics and Geography (INEGI), positions the city of Puerto Vallarta as the safest in the state of Jalisco, and the second safest in all of Mexico.

The management to acquire these posts was carried out during the previous municipal administration, and so far they have been distributed in areas classified as “red zones” due to their high incidence of crimes. In 1956, a group of friends from Vallarta met with Engineer Juan De Dios De La Torre, who, motivated by the experience of having obtained first place in fishing in New Zealand, convinced them to organize a competition to attract fishermen from other parts of the Republic, and they would confirm the abundance of fishing in the Bay. These friends, who were the founding partners, all of them entrepreneurs and visionary people, pioneers of various businesses (three of them were Municipal Presidents), believed that sport fishing could be the trigger for tourists to visit us.

From the first tournament we had participants from the United States, so since 1957 it was ambitiously named “International Sailfish Fishing Tournament”. With the help of our strongest sponsor (Mexicana de Aviación), Puerto Vallarta was promoted as a fishing destination for tourism. This tournament was the first promotional effort for this city and it continues to be our main objective. This Club wants to put Puerto Vallarta on the international fishing map, along with other destinations such as Hawaii or Los Cabos, which we have nothing to envy.

Sport Fishing leaves a significant wealth spill, far above other tourist attractions in Puerto Vallarta. This Fishing tourism repeats its visits according to the seasons of arrival of the different species, since fishing can be practiced all the time.

The Puerto Vallarta Fishing Club and its emblematic Fishing Tournament have persisted until now for 60 years because it was built on very solid foundations –Efrén Calderón told me recently […] the Fishing Club cannot die, its history supports it […]–, honest men who first formed a family and built a heritage with continuous, persistent work, without advantages or fraud –not like today’s style where some often amass formidable fortunes overnight–.

When founding the Club, they built an institutional umbrella for sport fishing. However, I dare to reflect that a special award is needed to honor the sport of fishing for sport per se; the award, although valuable, should be essentially symbolic, the Golden Garland for Sport Fishing. This award, for the species that are promoted today in the tournament, will have to be caught with a line of a maximum of 30 pounds.

The prizes should be presented to the winners in a solemn ceremony, in an emblematic place in Puerto Vallarta, by our most beautiful women, who would also give the winners a kiss; all in memory of that beautiful romantic era of the late 1950s when the Puerto Vallarta Fishing Club was conceived. I bet a peso on whoever accepts the challenge –because that is what I want to win– that many will compete just like in the old days, just for the pleasure of fishing; to prove that whoever achieves that kind of feat achieves the honor because the honor is deserved.
