Today’s adventure took us high above Puerto Vallarta and deep into the stunning Sierra Madre Mountains and what a ride it was!
We headed out with Unique ATV Tours from “López Mateo” next to the 5 de Diciembre Colonial and chose to roll in style six of us comfortably seated in a Can-Am Defender side-by-side. If you are into power, suspension that actually works, and feeling secure while climbing into the mountains, this setup delivers. Note they also have three seaters as well as ATVs

The journey itself is half the magic. You leave the city streets behind and wind your way through small towns and villages, transitioning from pavement to cobblestone to dirt roads. Along the way you’ll ride beside mountain streams (and cross a few!), pass panoramic viewpoints, and discover that these “remote” mountains are very much alive alpine meadows, cornfields, grazing cattle, and plenty of free-range cows and horses sharing the trail.

After the ride up, nothing beats soaking in a hot tub with a margarita in hand. We spent time feeding the deer, then sat down for a well-earned lunch fajitas, a sizzling molcajete bowl, and even classic burgers and fries if that’s your vibe.
On the way back to town, we stopped at a local tequila distillery for an informative tasting and crash course in everything agave because no proper Jalisco adventure ends without tequila.

This was our first (and last) lunch during our one-week PV trip. The first time we each ordered a pancita taco and a pancita en salsa verde taco ($39/pz; $43 chela).
The pancita in sasa verde was exceptional. Beyond that, they have one of the best salsas bars I have encountered in Mexico (or anywhere?) as there were three different habanero options. Their handmade, blue-corn tortillas are also great. Our second visit, I wanted to make sure to try each of their specials: tacos dorados $120* (uno y uno) and the guacamaya $130* (salsa a lado).

They were both excellent, and it’s so hard to compare them to each other or to our first visit. I think the tacos dorados are awesome because of the texture the tacos dorados provide. This special also offers more surface area to add…more salsas from the salsa bar to! One of our favorite restaurants of the trip, and every item we ordered from here was 5/5! Service and ambiance were also 5/5 IMO.
