What Makes a Mexico Michelin Restaurant

0

Within Gastronomy, there are quite a few awards or recognition at the national, Latin American and WORLD level, among them is the most important one that before it arrived in Mexico and the USA it was only European, and if I’m talking about the Michelin Guide A quite important recognition in the gastronomic environment, as many professionals and students are unaware (myself included) what meaning and how much relevance the Michelin Star has Let’s first see how the Michelin Guide was created Its origins were quite humble and it did not begin as a reference guide as it is today. It was conceived as an incentive to invite motorists to take to the road.

Ultimately it had a great vision, when it all began in the center of France, in 1889 the brothers André and Edouard Michelin founded the Michelin tire company, encouraged by a positive forecast in the industry in the country, which at that time had less than 3,000 vehicles. In support of the automotive industry and the development of the Michelin Group brand, they decided to provide motorists with a guide that would make their journey easier.

This is how the now famous MICHELIN Guide came about, André Michelin wrote: “This work appears century after century and will last as long as he does. It was free for 20 years, until André Michelin went to a tire shop and discovered that the guides were being used as shims for a stool, it was then that in 1920 he launched a new MICHELIN GUIDE at a price of 7 francs, in Mexico it would be 160 pesos It was not until 1923 that rubrics began to appear and the Michelin brothers, aware of the growing interest, recruited a team of mysterious diners, who are known as inspectors to visit and anonymously rate restaurants 3 years later they began to evaluate the quality of the establishments with stars, initially only 1 star was awarded, after 5 years, the hierarchy of 1, 2 or 3 stars was established and 10 years later the criteria applied for the granting of said stars were published awards.

Currently, the Guide is a world reference in the field of gastronomy, and that’s why, in addition to learning the history of the Michelin Guide, we’re going to clarify some questions that are surely echoing in your head as they were in mine: What is a Michelin Star? Recognition awarded to a restaurant that offers exceptional cuisine. 5 criteria are taken into account: quality of ingredients, harmony of flavors, mastery of technique, the chef’s personality reflected in their cuisine, and consistency over time and in the overall proposal. Can any restaurant qualify for a Michelin Star? Of course, no matter the style and type of cuisine, they can opt for a Michelin Star.

Are the Michelin Stars awarded to the chef or the restaurant? They are awarded to the restaurant. If the restaurant upgrades the sous chef or changes the chef, they will simply return to the restaurant and rectify if they continue cooking with the same seasoning. Is there a limit to the number of stars awarded per year? No, they usually have several candidates during the same year, but not all of them usually win due to a lack of irregularities. Being that they have 1 or 2 star dishes but the rest of their menu is not remarkable.

Are Michelin stars only awarded to formal or elegant restaurants? No, 30 or 40 years ago in most European cities the best type of cuisine was found in formal restaurants, today there are street food establishments in Asia that qualify for the Michelin star.

What are the differences between 1, 2 or 3 Michelin stars?
1 Michelin Star: indicates a high level of cuisine
2 Michelin Stars, indicates exceptional cuisine
3 Michelin Stars are the highest distinction and are reserved for unique restaurants In short, there are endless doubts that arise about the Michelin
Passionate consumers of gastronomy, to investigate much more about this important recognition worldwide and now in Mexico as well.

Mexico hosted the prestigious Michelin Guide 2025 for the second time on Tuesday, June 3rd, in a ceremony in which 23 restaurants were awarded the coveted stars for the first and second time.

Puerto Vallarta Luxury: in High-End Hotels

Re-imagined Luxury: The Evolution of Food and Beverage Service in High-End Hotels

In luxury hospitality, every moment counts. It’s no longer just about offering a comfortable bed or a spectacular view: the true value lies in providing memorable experiences. In this context, food and beverage service becomes one of the key pillars for winning over guests and making a difference.

VIDEO: Hilton Ziva Puerto Vallarta https://www.facebook.com/ray.dion.73/videos/1393436511676807/

The New Face of Hotel Luxury
In high-end hotels, luxury has evolved. Today, it means hyper-personalized attention, authenticity, and emotional connection. Guests are not just looking for an exquisite dinner, but a complete sensory experience, where each meal or cocktail tells a story and is carefully designed to resonate with their lifestyle. Modern luxury no longer revolves exclusively around exotic ingredients or refined tableware, but rather focuses on sustainability, traceability, signature cuisine, and exceptional human service.

Keys to F&B Service in Luxury Hotels
Total Personalization: from remembering guests’ dietary preferences to offering menus tailored to their culture, diet, or time of day. Gastronomic Staging: experiences that integrate design, music, aroma, and presentation to engage all the senses.

Intuitive Hospitality: a team that knows when to approach and when to leave space, mastering the art of invisible yet attentive service. Exclusive Experiences: from private dinners in unique locations within the hotel to tastings guided by experts or live chefs.

Technology as an Ally, Not a Main Event
Luxury hotels are incorporating technology to enhance the experience without sacrificing warmth: smart reservation systems, guest profiles that record tastes and restrictions, personalized digital room service, and interactive culinary experiences. All with one goal: to facilitate without dehumanizing.

In the luxury hotel sector, food and beverage service is no longer just an add-on: it is a central experience. This is where guests discover the true essence of the brand, where they become loyal, excited, and often decide to return. Because in the world of luxury, it is not enough to satisfy; you have to surprise, excite, and exceed expectations. And that often starts at the table.

Puerto Vallarta a Agentes Viajes en Chihuahua

0

Puerto Vallarta World Oceans Day Greenpeace

0

Puerto Vallarta World Oceans Day with Greenpeace

In the framework of World Oceans Day, to be celebrated this June 8, 2025, the environmental organization Greenpeace Mexico held a Monumental Kite Festival featuring various marine life on Holi Beach.

A group of 17 giant kites with colorful shapes evoking the life that inhabits this vast aquatic territory were displayed in the sky along with the message “Without oceans there is no future.” Whales, manta rays, and giant sperm whales emerge from the sea to demand protection for their home, the oceans.

The objective of the activity is to remind the Mexican government of the importance of accelerating the approval of the Global Ocean Treaty by 2025. Our country was one of the first nations to sign it, but at least 60 countries must also ratify it, and Mexico must also be one of the first to do so and confirm its commitment as a leader in ocean protection.

The beauty and biodiversity of the oceans face today, more than ever, multiple threats such as plastic pollution and deep-sea mining, among others.

Therefore, it is also essential to raise public awareness about the urgency of ensuring their comprehensive protection and creating marine sanctuaries that protect these ecosystems from harmful human activities.

Citizen participation is essential to achieving this protection, and that is why we are holding this activity. We call on people to take action and add their voices to ask the Mexican government to ratify this Treaty. Achieving change is possible, and we are very close to achieving it, but this can only be done through collective efforts that advance our demand.

There is a petition addressed to the head of the Ministry of Foreign Affairs, Juan Ramón de la Fuente, urging him not to fail the oceans, the species that inhabit them, or the world. Anyone can sign it at the following link:

Puerto Vallarta Airport Construction on Time

0

The expansion work at Puerto Vallarta International Airport continues steadily with the construction of its new Terminal 2, which is projected to open by the end of 2026. This expansion represents a key investment to strengthen the destination’s air connectivity and meet the growing domestic and international tourism demand.

With this new terminal, the airport is estimated to be able to handle more than eight million passengers per year, consolidating its position as one of the five airports in Mexico that account for 90% of international connectivity. The expansion encompasses an area of over 89,000 square meters and will have the necessary infrastructure to handle both domestic and international flights.

During 2024, the airport handled 6.7 million people, a figure that reaffirms the need for this expansion. The project required 23,000 tons of steel and the installation of 31 seismic isolators, ensuring the structural safety of the project.
The new terminal will be equipped with cutting-edge technologies for check-in processes, with the goal of significantly improving the travel experience for users.

It’s worth noting that this project has earned LEED Gold certification, which attests to its commitment to sustainable, environmentally friendly construction that meets the highest international standards in energy efficiency.

Michelle Fridman, Secretary of Tourism for the State of Jalisco, receiving a progress report on the project.

SEGUNDA TERMINAL PUERTO VALLARTA EN 2026 https://promovisionpv.com/segunda-terminal-puerto-vallarta-en-2026/

Anyone passing by can already see the complete structure. It will be finished next year, and we’ll begin the gradual move-in. Getting a new terminal up and running doesn’t happen overnight; it’s a very gradual process with airlines, so I’d say the terminal will be fully operational within two years. The new project will have a surface area of more than 68,000 square meters, representing a 150 percent growth. Additionally, the number of aeroplane aisle positions will increase from 11 to 19, as well as the increase from 9 to 16 remote gates. According to GAP, Terminal 2 at Puerto Vallarta International Airport will have the capacity to handle 4.5 million passengers per year. GAP is investing $7 billion in airport expansion in Puerto Vallarta. Tuesday, August 30, 2022 With an investment of 7 billion pesos, the remodeling and expansion of the Puerto Vallarta International Airport began yesterday. This includes the construction of Terminal 2, with an investment of 4.4 billion pesos.

Jalisco Booming Pacific Coast State

0

Jalisco’s capital city, Guadalajara, offers of a beautiful mix of Mexican tradition and modern attractions.

The Mexican state of Jalisco is anchored by the popular seaside city of Puerto Vallarta and the state’s capital, Guadalajara. Rich in culture, geography, cuisine, art and adventurous pursuits, Jalisco deserves to be on every traveler’s mental map — and that’s a goal that Michelle Fridman, secretary of tourism for Jalisco, aims to achieve.

Guadalajara visitation numbers are on the rise, and Puerto Vallarta reported its strongest tourism year ever in 2024. The much-talked-about region of Costalegre (the stretch of coast between Puerto Vallarta to the north and Manzanillo to the south) is also here, and major hotel developments promise to bring continued attention to the region.

What is on the horizon in Jalisco, and to gather her pro tips for helping clients explore the best the state has to offer.

Michelle Fridman, secretary of tourism for Jalisco

How do you describe Jalisco to travelers who have never been?

We like to promote Jalisco as the most Mexican destination. Mexico receives the most tourists of all of Latin America, and that’s because of our diversity, our flavors, our food, our people, our traditions and our beaches — and Jalisco has all of those things.

When we go out of Mexico to talk about our country, most of the time people ask about tequila and mariachi — these are iconic, and they are from Jalisco. You will find all of the country’s diversity in our state. Of course, Puerto Vallarta is a must — it’s the most beautiful beach in the Pacific, by my standards, and you get to have this cute Mexican town right in the middle of the ocean and the jungle. You don’t see many beaches with personality like this.

Tlaquepaque is a Pueblo Magico right in the heart of Guadalajara.

Mexico City draws in visitors with its art, history, culture, architecture, cuisine and more. How does Guadalajara, Jalisco’s capital, compare?

Guadalajara is just as interesting and fascinating, with all the events, entertainment, art, design and gastronomy that a modern city can offer. It is the second-largest city in Mexico, but it’s not so big that you get overwhelmed.

And from Guadalajara, you can go explore our Pueblos Magicos, or go to the beach in Puerto Vallarta. Travelers can take the train to Tequila town, which departs right from Guadalajara’s downtown. In Mexico City, you usually just see Mexico City.

Guadalajara is a modern destination, but it keeps a lot of its traditions intact, with mariachis playing in each plaza, for example, because this was the birthplace of mariachi. You will find Tlaquepaque, a Pueblo Magico, right inside the city. And what’s going on in Guadalajara right now in terms of creativity, art and design is really interesting — like what happened in Mexico City maybe 15 years ago, with new restaurants and new designers coming in. So, it’s this full experience, contemporary and traditional.

Costalegre is a gem, and maybe our best-kept secret.

Careyes, located on Jalisco’ Costalegre, offers untouched beaches.

Discover the Costa Alegre, Jalisco, Mexico https://promovisionpv.com/discover-the-costa-alegre-jalisco-mexico/

Where should travelers returning to Jalisco go?

I would send them to any of our Pueblos Magicos, and to Costalegre. Costalegre is a gem, and maybe our best-kept secret. I think it will be the coastal area with the biggest development in the next 10 years.

The Joyful Coast of Jalisco (Costa Alegre) https://promovisionpv.com/the-joyful-coast-of-jalisco-costa-alegre/

We have some of the nicest hotels I’ve ever seen — not only in Mexico, but in the world — on our beaches. Cuixmala, for example, was shocking to me; it’s a beautiful castle, usually used for film shoots and celebrities. It is exclusive, with a private beach and its own safari, with zebras, giraffes and crocodiles. It is a fantastic and massive property, with a lot of things to do.

There is also Las Alamandas, the Four Seasons Tamarindo and the mansions of Careyes. And among those super luxury hotels are also cute little places (which are far more affordable) like Punta Perla and Playa Manzanilla. There, the luxury is about nature — you’ll go to the beach and find a man who just pulled hundreds of oysters and clams from the sea, for example.

Costalegre is a pristine stretch of Mexico’s coastline. Will sustainability be prioritized throughout its development?

Mayto, 1st Astrological Park Puerto Vallarta https://promovisionpv.com/mayto-1st-astrological-park-puerto-vallarta/

Costa Alegre, Jalisco, Mexico https://promovisionpv.com/costa-alegre-jalisco-mexico/

I would like to think that is possible, and my job is going to be to try as hard as I can to make that happen. I don’t have complete control — and I’m saying that after six years of trying to develop Yucatan in the most sustainable way. Yet, there are some buildings you wish were not built there.

Of course I want more tourism, but overall, I want better tourism — that’s what we’re moving toward.

As an industry, there are many things we’ve learned over the last decade, and what I’m trying to do as a minister is to apply that knowledge toward better development, toward sustainable development. Of course I want more tourism, but overall, I want better tourism — that’s what we’re moving toward.

Can you give an example of a property that’s doing that well?

There are many examples in Puerto Vallarta and in Costalegre. There are plenty of hotels that are off the grid in Bahia Banderas, for example, because that area is so natural that you cannot build. So, what investors have done is set up glamping options, with their own electricity, and their own water treatments.

Cuixmala has a fantastic turtle conservation program, the Four Seasons is doing programs with whales and turtles. And many properties are using local products. And that’s where gastronomy becomes really important. Jalisco has one of the most interesting gastronomy scenes that I’ve seen in Mexico; we make cheese, meat, vegetables, chili, spirits, tequila and more. So, the food scene is growing with talented chefs who are using those local products. And that’s also a form of sustainability.

Mature destination like Puerto Vallarta set the example of what the new all-inclusive should look like. It is integral that everybody can fit in a destination, and be treated with respect.

What cultural experiences in Jalisco do you most recommend?

If you go to Guadalajara, you will find plenty of cultural events, art, theater, museums and expositions. If you go to downtown Guadalajara, you will be amazed by the Hospicio Cabanas and the Teatro Degollado. In Puerto Vallarta, there are art walks and galleries. And Pueblos Magicos are where you will find the culture and tradition in its best expression, because that’s where the real artisans are working. You will also find many different churches and sanctuaries here.

San Sebastian del Oeste

The state of Jalisco is home to 12 Pueblos Magicos, including San Sebastian del Oeste.

What’s the best way to access Pueblo Magicos?

Jalisco has 12 Pueblo Magicos, and there are many tour operators who work with them. No matter which region of the state you are in, you’ll find a Pueblo Magico nearby. From Vallarta, San Sebastian de Oeste is just 40 minutes away, but it’s a completely different climate and a completely different scenario, with cobblestone streets and fog on the mountains, where they cultivate coffee.

Increases Air connectivity Jalisco and Canada https://promovisionpv.com/increases-air-connectivity-jalisco-and-canada/

There is also Mascota, there is Tapalpa, there’s Tequila town. If you go to Chapala, also 40 minutes from Guadalajara, you find Ajijic, which is the most diverse place in Mexico in terms of cultures and nationalities.

With more visitors heading to Jalisco, what does air connectivity look like right now?

Two of the five best-connected airports in the country: Guadalajara and Puerto Vallarta is very well connected, with more than 90 destinations worldwide, and is well connected domestically, also.

Then, both airports are growing and being renovated. Puerto Vallarta is getting a new terminal, so it is going to be twice as big. Guadalajara just expanded with a second runway, and it just received an award as the most beautiful airport in Latin America and it is.

25° Aniversario Haciendas y Casonas de Jalisco

0

Gastronomic Corridor Puerto Vallarta’s Asipona

0

The Secretary of the Navy (Semar) continues its new mission to promote tourism in the country. From various perspectives, they are promoting projects that seek to complement the daily work of state tourism authorities.

Little by little, sailors are no longer seen as intruders in a sector in which they had no involvement.

These days, a group of experts from the National Port System Administration (Asipona) in Puerto Vallarta is working tirelessly to launch, eventually in October, the bidding process for the development of an innovative gastronomic corridor and a beach club within the port, with an estimated investment of 50 million pesos.

The challenge is no small one and stems from a market study that aimed to identify business lines that could be developed within the port (compatible with the concession title) and attract more tourists.

Thus, the feasibility of developing a gastronomic product that would satisfy the needs of visitors, both foreign and domestic, was determined.

“The project consists of designing, building, equipping, operating, and maintaining five restaurants offering Mexican cuisine. The land area is 11,301 square meters and is located in the port area, with waterfront (southern cliff at the entrance to the port area). Taking advantage of the sandy area, the plan is to offer a beach club service with lounge chairs, tables, chairs, and a pool, where food and drinks can be consumed,” official information states.

The private sector is known to be enthusiastic and is providing advice on how to generate benefits in their locality.

Consequently, the bidding project has already generated interest from several companies that see an ideal opportunity to transcend with their local cuisine.

It is anticipated that there will be substantial support in this endeavor from Jalisco’s Secretary of Tourism, Michelle Fridman, who enjoys the full support of Governor Pablo Lemus. Both want to make their mark on the sector.

In the first four months of 2025, 76 cruise ships were received at Asipona, five fewer than in the same period last year. 237,180 passengers arrived at the port, a 0.5% drop compared to the same period last year, despite the federal government’s incredible threat to impose an additional fee upon arrival in Mexico.

Therefore, there is an urgent need to create new infrastructure and a new tourism product.
