Raicilla Is More Than a Drink

If tequila represents one of Mexico’s most famous spirits, Raicilla represents one of Jalisco’s best-kept cultural secrets.

For visitors, that means:
Learn the story.
Ask where it was produced.
Learn about the agave.
Respect the producer.
Taste responsibly.
Support legitimate local businesses.
A responsible Raicilla experience can contribute to rural tourism and help visitors understand the communities that preserve this tradition.

Travelers arriving in Puerto Vallarta often discover the Pacific beaches, the Malecón, Zona Romántica, the Sierra Madre mountains, Mexican cuisine, whale watching, snorkeling, sailing and the many villages surrounding Banderas Bay.

But there is another experience that connects many of these things together: Raicilla.

Raicilla is an artisanal agave spirit deeply connected to the mountains and Pacific coast of Jalisco and, through its protected production territory, Bahía de Banderas in Nayarit. Mexico officially protected the name Raicilla as a Denomination of Origin on June 28, 2019. The protected territory includes 16 municipalities in Jalisco and one in Nayarit.

For a traveler, Raicilla offers something that a conventional tequila tasting cannot always provide: a direct connection to the landscape, people, history, agriculture and food culture of the Puerto Vallarta–Riviera Nayarit region. And that makes Raicilla an important part of understanding the destination.

What Is Raicilla?

Raicilla: The Spiritual Drink Raicilla Cultural Tradition Treasure

Raicilla is a 100% agave distilled spirit traditionally produced in the protected geographic area of Jalisco and Nayarit.

It is related to Mexico’s broader tradition of agave distillation, but it is not tequila.

The official Mexican regulatory framework describes Raicilla as a regional alcoholic beverage of Jalisco and Nayarit made from agave or maguey, through fermentation and distillation of cooked mature agave heads. The referenced specifications identify an alcohol range of approximately 35% to 55% alcohol by volume.

Different agave species, landscapes and production techniques help create different expressions.

That is one reason travelers should not think of Raicilla as a single flavor.

Instead, think of it as a family of regional expressions.

Why Is Raicilla Called the Spiritual Drink of Jalisco?

The word “spiritual” is especially appropriate when describing Raicilla because the drink is connected to much more than alcohol.

It connects:
agave
mountains
Pacific coast
agriculture
family traditions
rural communities
Mexican history
gastronomy
craftsmanship
tourism
local identity
regional economic development

A glass of Raicilla can therefore become a starting point for understanding the destination itself.

The official Denomination of Origin documentation explains that Raicilla production is linked to the geographic characteristics of Jalisco and Nayarit, including the varieties of agave and production methods used in different municipalities.

Raicilla and Puerto Vallarta: A Natural Connection

Puerto Vallarta is not simply a beach destination.

It sits between the Pacific Ocean and the Sierra Madre, creating an extraordinary geographic environment where coastal and mountain cultures meet.

Guachinango

and Bahía de Banderas, Nayarit.

Authentic Mexico travel

Instead of experiencing only the internationally recognizable side of Mexico, visitors encounter something deeply regional.

This is exactly the type of experience today’s destination traveler increasingly seeks.

Promovision’s broader Puerto Vallarta travel coverage emphasizes the importance of authentic culture, gastronomy, neighborhoods, nature, adventure and local experiences rather than simply presenting Puerto Vallarta as a beach resort destination.

The Two Great Regional Expressions of Raicilla

One of the most interesting aspects of Raicilla is that geography matters.

Promovision’s research on Jalisco’s agave traditions describes two broad regional expressions:

Raicilla de la Sierra

Mountain Raicilla is associated with agave species including:
Agave maximiliana
Agave inaequidens
Agave valenciana

The Sierra environment contributes to a distinctive regional identity.

This is the Raicilla experience travelers can associate with destinations such as San Sebastián del Oeste, Mascota and Talpa de Allende.

Promovision’s coverage of Jalisco’s Magical Towns highlights Mascota’s connection with Raicilla and its Sierra culture.

Raicilla de la Costa

Coastal Raicilla is associated with agaves including:
Agave angustifolia
Agave rhodacantha

The coastal expression connects particularly well with the Pacific environment around Puerto Vallarta and the Costa-Sierra region.

Promovision’s Raicilla coverage describes coastal production as an experience where Pacific breezes and the Sierra Madre landscape meet.

How Is Raicilla Made?

The production process begins with the agave.

Raicilla Hacienda Divisadero Tasting Travel Guide
Raicilla: The Spiritual Drink Raicilla Cultural Tradition Treasure Raicilla Hacienda Divisadero Tasting Travel Guide

Raicilla: The Spiritual Drink Raicilla Cultural Tradition Treasure Depending on the producer and style, the process can involve:

1- Growing or harvesting agave
2- Selecting mature plants
3- Jima — harvesting the agave
4- Removing the leaves
5- Cooking the agave hearts
6- Milling or crushing the cooked agave
7- Fermentation
8- Distillation
9- Resting or maturation in some expressions
10- Bottling

The process is not merely industrial manufacturing.

For traditional producers, it is a combination of agricultural knowledge, local environmental knowledge and inherited production techniques.

Mexico’s proposed technical standard for Raicilla describes production within the protected territory and addresses production, packaging, labeling and commercialization.

Is Raicilla the Same as Mezcal?
This is one of the most common questions. The short answer: No.

Raicilla belongs to Mexico’s larger family of agave spirits, but Raicilla and mezcal are distinct protected designations with different geographic and regulatory frameworks.

The historical record is particularly interesting.

Raicilla: The Spiritual Drink Raicilla Cultural Tradition Treasure The official Denomination of Origin documentation notes that Raicilla and tequila have historical relationships to agave distillation, but Raicilla could not use the tequila designation because tequila’s protected production is tied to Agave tequilana Weber var. azul and its own Denomination of Origin rules.

So the easiest way for travelers to understand it is:
Tequila, mezcal and Raicilla are different Mexican agave spirits.
Do not assume that one is simply a different brand of another.

Is Raicilla Tequila? No.

This distinction matters.
Tequila has its own Denomination of Origin and regulatory system.
Raicilla has its own Denomination of Origin, established in 2019.
The Mexican government identifies Raicilla separately from tequila and mezcal among Mexico’s protected products.
That distinction is actually part of what makes Raicilla so fascinating for international travelers.
It is not simply “another tequila.”
It is **a regional Jalisco identity of its own

The History of Raicilla

Raicilla has a fascinating history.

Official documentation traces its production history back centuries and describes evidence of the drink’s development during the colonial period. It also records historical references from San Sebastián del Oeste dating to the late nineteenth century.

One commonly cited explanation for the name Raicilla relates to historical restrictions on alcoholic beverage production during the Spanish colonial period.

The proposed Mexican standard discusses a prohibition imposed in 1785 that lasted until 1792 and recounts the theory that the name “Raicilla” may have been used to distinguish the spirit from prohibited products.

The important point for travelers is not simply the legend.

It is that Raicilla survived.
It remained part of local culture.
And today it is emerging from regional obscurity to become one of Jalisco’s most interesting cultural products.

2019: The Year Raicilla Became a Denomination of Origin

One of the most important moments in Raicilla’s modern history occurred on: June 28, 2019.
On that date, Mexico’s Instituto Mexicano de la Propiedad Industrial — IMPI — published the General Declaration of Protection for the Denomination of Origin “Raicilla.”
The declaration recognized the geographic, human and cultural characteristics associated with Raicilla.

According to IMPI, the protection directly benefited producers and communities and was intended to help Raicilla reach Mexican and international markets with greater recognition and protection.

This makes Raicilla much more than a trendy cocktail ingredient.

It is a legally protected expression of Mexican regional identity.

Raicilla and International Tourism

The international opportunity is enormous.

Travelers from:
United States
Canada
France
United Kingdom
Europe
Australia
Latin America
are increasingly interested in local food and beverage experiences.

Important 2026 accuracy note: I would describe the Raicilla standard as still being developed/finalized, rather than saying that the NOM-257 is already fully in force. The official 2026 infrastructure program still includes work on the Raicilla standard, while the 2025–2026 legislative record shows efforts to complete and publish it. This is a useful E-E-A-T detail because it prevents the article from repeating an outdated claim that the proposed NOM is already a final standard.
