Raicilla is a traditional distilled spirit (an agave distillate) from the southwestern part of Jalisco, Mexico.
The name “raicilla” literally means “little root” (though it is not made from roots — it’s made from the heart or “piña” of agave).
Like mezcal, it is made by cooking, fermenting, and distilling agave. But raicilla has its own regional styles, species of agave used, and traditions.

It is legally protected by a Denomination of Origin (DO) since 2019. That means only raicilla produced in certain municipalities in Jalisco (and some in Nayarit) under certain standards can carry the name “Raicilla.”

Types & Flavor
There are two broad regional styles:
Raicilla de la Costa (“of the coast”): made in coastal zones (e.g. Cabo Corrientes) using agave species like A. angustifolia and A. rhodacantha.
Raicilla de la Sierra (“of the mountains”): made inland (e.g. Mascota, San Sebastián del Oeste) using species like A. maximiliana, A.

The flavor of raicilla can vary quite a bit depending on the agave species, the terroir (soil, water, altitude), the yeast, and the distillation methods. Some are floral, herbal, fruity, or mineral; others may be smoky or earthy.
As a spirit, it tends to be relatively strong (often well over 40% ABV before dilution) and is usually bottled clear (if aged in inert containers) or slightly colored if aged in wood.

Unlike tequila, which uses only blue agave, raicilla uses a variety of agave species.
Raicilla is often served cold, neat, or with a few drops of water or ice. Bartenders also experiment with it in cocktails (as a substitute for mezcal or gin).

Where Can You Find Raicilla?
When you are in Puerto Vallarta, Jalisco, your chances of finding it are better than in many places. Here are suggestions:
Local / In Mexico
Bars & Raicillerías: In Puerto Vallarta, there are bars or specialty spots that feature raicilla. (E.g. “La Lulú Raicillería” is mentioned in a cocktail article as a dedicated raicilla spot in the region)

Specialty liquor stores or agave‐spirit shops: Seek out shops oriented to mezcal, tequila, and craft spirits — they may carry local raicillas.
Distilleries / Tabernas: In Jalisco (coastal regions: Cabo Corrientes area; inland: Mascota, San Sebastián del Oeste), you may find small distilleries (tabernas) producing raicilla. Some may sell directly or allow tastings.
In Puerto Vallarta stores / markets: Some travelers report difficulty finding raicilla in ordinary liquor stores in Puerto Vallarta, so exclusive or boutique liquor shops are your best bet.
Online / Export
