The word pozole comes from the Nahuatl word pozolli, from tlapozonalli, which means frothy. Pozole is a broth of cacahuazintle corn kernels. We must precook this corn for two hours so that the kernels lose the fibrous husk that covers them. Then, when they boil, they open like a flower, which gives them a foamy appearance.
Pre-hispanic roots of pozole
This dish part of the Aztec’s diet before the conquest. Emperor Moctezuma used to enjoy a pozole dish offered to the god Xipe Tótec. He was the deity of fertility and corn regeneration. Chronicles and documents from the colonial period tell us that the ancient Nahua ate human flesh in a stew with corn kernels called tlacatlaolli, which in Nahuatl means “man’s corn”. However, with the arrival of the Spaniards the recipe changed. The new ingredients were the animals they brought with them. Thus, chicken, beef and especially pork became essential. How to make it
The first step in the preparation of pozole is to cook a kilo of corn with two tablespoons of lime. This is “nixtamalization” and is useful to eliminate the crude fiber of the grain and the lignin, which is toxic. Then, you cook the corn in water with the pork meat, which can be head or leg. You can add the backbone to flavor the broth. The tostadas are the traditional accompaniment.
What is your favorite pozole?
Nowadays, creativity and innovation make us find pozoles for all tastes. It all depends on who prepares it and the region it comes from. For example:
White Pozole
This is the most popular. You prepare it with dried cacahuazintle corn and part of the pig’s head. Lime juice, salt, hot sauce or ground piquin chili are the essential seasonings. You can also add lettuce, sliced radishes, chopped onion and ground oregano.
Red Pozole
It comes from the state of Jalisco. The main difference is the preparation with ancho and guajillo chiles. Pork is the most common, but some people prepare it with chicken or turkey.
Green Pozole
You prepare it with green tomatoes, epazote and pumpkin seeds. It comes from the state of Guerrero, and in some cases pork rinds and avocado accompany it.
Seafood Pozole
It is very popular in the coasts of Colima, Jalisco and Nayarit. However, it is also popular in other coastal states. The main ingredient is shrimp broth cooked with pork lard. At the end, you add shrimp, fish, octopus, and clams.
Vegetarian Pozole
If you are one of those who lead a vegetarian lifestyle, there is a recipe for pozole made with mushrooms and mushrooms. Obviously, the broth doesn’t take pork head, like the traditional ones. So, in this case, you prepare it with bay leaves, garlic, onion, guajillo chile and mushrooms.
Whichever type of pozole you prefer, it is a dish with a great history.

SUBJECT: PRESS RELEASE DEPARTMENT: GENERAL MANAGEMENT
We inform the media: The Puerto Vallarta School Orchestra is a non-profit Civil Association whose purpose is to “build better citizens through music”, that is why we focus on providing a socio-formative program with a musical approach aimed at children, adolescents and young people. After 12 years of experience, the OEPV counts more than 5 thousand beneficiaries belonging to the most popular colonies of Puerto Vallarta.
We are aware that not all those who have gone through OEPV will be professional musicians, in fact the vast majority of them choose other careers, but what we are sure of is that, whatever their career or occupation, all of them now have a positive impact on our society because participating in our socio-educational program not only provides them with musical skills, but also awakens their participative leadership in favor of the social development of Puerto Vallarta, in addition to providing them with tools to develop emotional intelligence. However, paying special attention to those who did choose to become professional musicians, we have several success stories, from current students who are still part of OEPV and already have an excellent instrumental level, former students who are studying at different conservatories in Mexico and professional trainers or former trainers who have been in charge of music teaching for 12 years. They all have in common that at some point they were part of the OEPV program and that music is still an important factor in their lives.
We have brought together these success stories to take a further step in musical demand and collaboration, which is one of the most important values they learned at OEPV. Today we are pleased to give you the happy news of the creation of a new group with an excellent musical level: the Camerata de Puerto Vallarta. Unlike the OEPV Children’s and Youth Orchestra, the Camerata is a smaller chamber ensemble, and besides age, which is another distinguishing factor, it is also worth noting that the Camerata exhibits a higher musical level than the Children’s and Youth Orchestra. As of today, you can see this Camerata at different social, business, political, or even religious events to liven up with its repertoire and “build better citizens through music” www.oepv.org Tel. 322-224-5671 / Cel. 322-241-6360 Av. Puerto Vallarta en Français https://promovisionpv.com/francais/ 120+ pages.
The word derives from the early 19th century, taken from the French word restaurer ‘provide meat for’, literally ‘restore to a former state’ and, being the present participle of the verb, the term restaurant may have been used in 1507 as a “restorative beverage”, and in correspondence in 1521 to mean ‘that which restores the strength, a fortifying food or remedy’.
There is a direct correlation between the growth of the restaurant businesses and institutions of theatrical stage drama, gambling and prostitution which served the burgeoning merchant middle class during the Song dynasty. Restaurants catered to different styles of cuisine, price brackets, and religious requirements. Even within a single restaurant choices were available, and people ordered the entrée from written menus. An account from 1275 writes of Hangzhou, the capital city for the last half of the dynasty:
In 1765, an innkeeper named Dossier Boulanger opened a restaurant in Paris and hung the following sign on the door: “Venite ad me vos qui stomacho laboratis et ego restaurabo vos”
There were not many Parisians in 1765 who could read French, much less Latin, but those who could, knew what Boulanger, the owner, said: “Come to my house, men with tired stomachs, and I will restore you.”
The phrase was so popular that since then, all restaurants in the world are called “RESTAURANTS.”
Apart from the delicious gastronomy that became famous throughout France, Boulanger delighted his diners with delicious desserts prepared by himself and due to the fame of his pastries, Boulanger is also the “culprit” that bakeries in France are called “boulangeries.”
The word RESTAURANT soon became established and the most reputable chefs who until then had only worked for private families, kings and ministers also opened their own businesses or were hired by a new group of small businessmen: RESTAURANTS
The term “RESTAURANT” came to the United States in 1794, brought by the French refugee of the revolution Jean Baptiste Gilbert Paypalt, who founded what would be the first French restaurant in the United States called “Julien’s Restorator”. Taken from the Web.
In many countries, restaurants are subject to inspections by health inspectors to maintain standards for public health, such as maintaining proper hygiene and cleanliness. The most common kind of violations of inspection reports are those concerning the storage of cold food at appropriate temperatures, proper sanitation of equipment, regular hand washing and proper disposal of harmful chemicals. Simple steps can be taken to improve sanitation in restaurants. As sickness is easily spread through touch, restaurants are encouraged to regularly wipe down tables, door knobs and menus.

Tamales were Mesoamerica’s first corn-based dish. Tamales’ origin comes from the ancient civilizations in Mexico as early as 8000 BC. Although the exact history is fuzzt at best, many historians believe that the Aztecs invented tamales ten thousand years ago. Tamales were a portable, protein-rich snack that Aztec soldiers could bring into combat with them.
Hunters could also carry them into the field. Women were in charge of making tamales. Tamales were produced by women. The laborious procedure was part of their daily routines and essential religious traditions. Tamales were initially cooked in a subterranean fire over hot ashes. When Spanish conquistadors arrived with pots and pans, women began boiling the corn-wrapped parcels. The Spanish also added other flavors to the veggie treats, such as pork and grease.
What are Tamales?
So, exactly what is a tamale? Tamales are created from masa, which is ground corn wet with water. Wrapping the masa in whatever leaves are available, such as corn husks, banana leaves, or even tree bark, is traditional. The wrapping gives the tamale its name, which originates from the Náhuatl word tamalli, which means “wrapped.”
Delicate meats, aromatic spices, and precisely cut veggies are stuffed into the tender masa. There are as many flavors of tamale filling as there are families that make them, as each cook puts her own spin. One of the most well-known variations is pork tamales with red chilis, but other fillings such as shredded chicken, black beans, and beef are also popular.
The secret is to use your imagination; There are even turkey tamales available! Tamales have come a long way since the early Aztecs ate them during battle. The use of flavorful fats and meats such as lard and pork butt has increased the flavor of the tamale.
How to Make Tamales at Home Whatever type of tamales you prepare, keep in mind that the process might be time-consuming. The Oaxacan style, for example, has 120 distinct steps! The proportion of masa to filling is critical. You want to be able to taste the luscious contents, not simply the dough, while making a superb tamale at home. A 50/50 split is ideal.
Masa has a custardy feel when added into a dough. You have to combine the corn dough with spices and lard, and your goal is to get a peanut butter-like consistency with nothing sticking to the sides of the bowl. You are ready to go when the dough is no longer sticky.
While you are kneading the dough, soak the corn husks in water. Trimming the husks is essential for making properly sized tamales. A decent length is about five inches. Next, spread two teaspoons of masa on each corn husk with a spatula or putty knife. Popular Tamale Fillings
When it comes to the pork filling, experts advocate using it cold. Place it in a line down the center of the husk to prevent it from running to the edges during cooking. Whether you stuff your tamale with soft meat, green chiles, potatoes, and garlic, or shredded chicken, corn kernels, and red sauce, the possibilities are as limitless as your imagination.
Pork with red chile sauce features pork butt or shoulder, as well as spices like oregano and cumin. A favorite topping is a spicy red chile sauce. Another popular one is black beans with cheese.
How to Assemble a Tamale
Fold both sides of the tamale and tuck the tail beneath to assemble. Cook them seam side up to prevent the filling from falling out. Bring the tamales to a boil first, then reduce to a low heat for about 40 minutes. Tamales are ready when the husk readily separates from the masa and filling. The best part, of course, will be sitting down to enjoy them, especially with your friends and family.
Tacos of many and any thing
Very few things identify the Mexican popular gastronomy as tacos. The ever-popular dish consists on a folded tortilla filled with… whatever ingredient comes to your mind. From fancy lobster to humble salt, any ingredient can be a part of the taco.
Tacos are descendants of the “quauhtaqualli” native from the Mexican central highlands. Obviously, Spaniards could not pronounce the name and called them taquallis. From this last expression is that tacos took their present name. Today, they have a plethora of last names:
de cabeza, prepared with each and every part of the pork’s head: brains, cheek, tongue, lips and else
de carnitas, Jalisco’s and Michoacan’s are unsurpassed
dorados, deep-fried to make tortilla hard
de barbacoa, with meat cooked inside maguey leaves
al pastor, with Lebanese-style marinated pork
de pescado, Baja’s fish are the best ones
de canasta, with hot broths sweating inside the basket
The original taco Hernán Cortés’ troops feasted with was surely of xoloscuintle and guajolote, the native name of turkey. The garnishes were the vegetables then available in the New World.
One thing is sure: Cortés’ mercenaries didn’t know back then the proper technique to eat tacos neatly. Here it is: thumb, index and middle fingers hold the tortilla by the upper part to keep it from unfolding. The ring and pinky fingers hold it from beneath to avoid ripping and dropping. If we eat while standing, the body’s tilting ahead is of great importance to watch for drippings.
You may also like: Wixarikas, Wirraricas or Huicholes?
You can achieve points for style, though. All you have to do is eating with the pinky pointing towards the sky! You will be the envy of your fellow taco gulpers, as you will be showing off the many pounds of tacos you have consumed.
Taco has walked many roads since the days of Aztec’s feasts. It has enriched itself in every visited place and with every ingredient it has come to acquaint. No component can escape the charm of a perfectly-round, smoking tortilla waiting to be filled. Its flavors can reach as high as duck, lobster, and fine cuts as rib-eye or New York, or even vegetarian tacos!
Birria: everything you need to know
Birria is a traditional dish from Jalisco that was originally prepared with only goat meat. The preparation is completely unique, and the best part is that it is a very versatile dish, as you can eat it alone, as a stew, or in tacos. is there much much to ask for? Visiting Jalisco is akin to eating delicious food, as this delicacy shows
However, you can find Mexican birria in many parts of the country. It is It is one of the many delectable traditional Mexican dishes you can put inside a taco and enjoy at any time. If you are a Mexican food enthusiast, you will love to know the origin of birria.
Where tacos al pastor come from
Most Mexicans know and/or have tried tacos al pastor. It is a very representative dish in Mexican gastronomy. The curious thing is that its origin hides a surprising history.
There are several hypotheses as to how this delicacy came to be. However, one of the most widely recognized ideas is that the recipe came from Asian immigrants. According to the myth, this meal is the creation of the Turks Iskender Efendi and his grandpa.
However, there is a very similar version that claims that these tacos originated from shawarma. Shawarma is a stew the Lebanese brought to Mexico. It is a traditional dish made with lamb or mutton, vinegar, Arab bread, and a variety of spices.

Puerto Vallarta is a resort town on Mexico’s Pacific coast, in Jalisco state. It is known for its beaches, water sports and nightlife scene. Its cobblestone center is home to the ornate Nuestra Señora de Guadalupe church, boutique shops and a range of restaurants and bars. El Malecón is a beach side promenade with contemporary sculptures, as well as bars, lounges and nightclubs.
Set amidst a backdrop of the towering Sierra Madre Mountain range, fringes of swaying palm trees grace yellow-sand beaches that hug the shores of the sparkling Pacific Ocean. Here, you will find the bustling coastal haven of Puerto Vallarta.
Originating as a quaint fishing village, PV, as it is commonly known, has become one of Mexico’s most popular beach resorts. An iconic vacation destination, PV has sprouted from its humble origins, first finding fame in the 1960s as the filming location for Elizabeth Taylor and Richard Burton’s Night of the Iguana.
Although teeming with resorts, shopping malls, housing developments and tourists, PV has retained its authentic Mexican magnetism as the ultimate hotspot in the enigmatic state of Jalisco – birthplace of tequila and mariachi music. Downtown, explore cobblestoned streets and historic architecture reminiscent of PV’s early roots.
Snaking along the oceanfront, the well-known boardwalk of El Malecon carves through the city’s most popular highlights, home to food stalls and street performers, and stands as the cultural artery of PV. The nightlife here is renowned, none more so than in the beating heart of the Zona Romantica, which hosts a thriving LGBTQ+ scene.
Venture beyond the resorts to rolling hills, jungle-clad mountains and fields of blue agave. Discover beaches suited to any traveller, from secluded coves to well-catered swathes of sand with an inviting array of marine excursions centered around the horseshoe of the Bay of Banderas.
An established gourmet city, PV sets taste buds tingling with traditional Mexican fare, and cosmopolitan restaurants showcasing creativity and imagination with world-class chefs.
Puerto Vallarta likes to showcase the city’s genuine hospitality and the natural charm that has won over couples, families, LGBTQ+ travelers, wellness enthusiasts, and others who return time and again to enjoy the sunsets over Banderas Bay, the majestic Sierra Madre Mountains, unspoiled jungle interior, and the charming cobblestone streets and historic architecture of the downtown area. With access to more than 50 outdoor activities, including swimming with wild dolphins, guided street food tours, and horse riding, travelers can find their own space in Puerto Vallarta – whether that’s in the heart of the city, amid the buzz and excitement of the Malecon, or on the secluded southern beaches of Quimixto and Yelapa.
The demand for foodie tourism, wellness travel, and responsible travel experiences has significantly grown in popularity and is now joined by pet-friendly travel, multi-gen travel, and medical tourism. Puerto Vallarta is becoming a destination of choice for specialist cosmetic procedures and so we are working with our hotel and travel partners to better engage this market.
Further, in the last few years, Puerto Vallarta is becoming a favored second home destination. This is a great asset for Puerto Vallarta and an organic trend that has evolved in part due to Puerto Vallarta attracting a significant number of repeat visitors, with many choosing to visit once or twice a year.
Puerto Vallarta is blessed with nature-rich landscapes, fauna and flora, and so it is important that we continue to integrate sustainable travel practices into travel programs, tour itineraries, and hotel operations, so that travelers can support our preservation efforts. Highlights from Puerto Vallarta’s nature and community-focused experiences include:
Ejido El Jorullo is home to Jorullo Bridge, the longest suspension bridge in the world for vehicles. El Jorullo was founded in 1940 by 180 inhabitants and 157 shareholders, and today it is managed by the North Coast of Jalisco Association of Foresters, mainly dedicated to the cultivation of various rare and indigenous plants, which are seeded using a local method adapted to the mountainous area.
A wildlife conservation area located in the jungle interior of the Sierra Madre Mountains, visitors can enjoy the peaceful surroundings from eco-chic cabins, a restaurant, pool, and nine hot spring pools. Activities include cycling, zip-lining, hiking, and bird watching.
The creation of the Gardens has provided an unprecedented opportunity for us to share with the world the wonderfully vast diversity of Mexico’s plant species. Visitors can tour the plant species, including Mexico’s largest collection of orchids, in a safe environment with guided viewing trails.
The butterfly sanctuary originally opened in March 2020 and re-opened in March 2021, with butterflies of various species, sizes, and colors.
Turtle release programs
From July through December, visitors can participate in sea turtle release programs, helping to find on average 70 to 230 nests and, depending on the location, release approximately 60 to 200 sea turtles per day during the season. Protecting these nests and safeguarding every hatchling journey ensures that sea turtles will return to Puerto Vallarta for generations to come. While participation in a sea turtle release in Puerto Vallarta creates a unique and memorable experience, it is also an outstanding opportunity for visitors to support local conservation work.
Puerto Vallarta has seized the opportunity to attract new demographics, specifically millennial travelers, as well as expand experience offerings within niche interest segments like wellness, ecotourism, and multi-gen travel. Travelers today are also more appreciative of the opportunity to explore new destinations and want to know that they are giving back to the communities they visit, so our resorts and alternative accommodations that offer authentic and responsible experiences are contributing to a faster economic recovery for our city.
Eat:
Vallarta Food Tours specializes in taco crawls that offer local insight into PV’s thriving food scene. Sample fish tacos and taste exceptional asada tacos, marlin tacos, elote with pork belly, pastor, churros and tejuino in other nearby hotspots.
Venture beyond the crowded tourist center of PV to the neighborhood of Versalles, and you will find the local gem of Barrio Bistro. Fresh ingredients combine in a vibrant array of daily specials, washed down with the locally produced distilled agave drink of raicilla, all conjured by culinary genius
Justifying its status as ‘The Friendliest City in the World’, as voted by Travel + Leisure Magazine, PV has long been acknowledged as a haven of inclusivity.
Often cited as the number one gay beach destination in Latin America, PV has been established as an LGBTQ+-friendly destination since the first waves of openly gay and lesbian travelers from Mexico City, the US and Canada in the 1980s and 1990s. So much so that since that time, this particular demographic of travelers has come to represent a major contributor to the tourism industry’s income stream that is receiving significant support and recognition from the municipal government.
PV hosts Mexico’s biggest ‘gayborhood’ – the Zona Romántica (Romantic Zone). This effervescent downtown area is home to lively night-club fiestas, live music events, a host of gay bars and clubs and even a dedicated beach. It is here where thousands gather in May every year for the city’s iconic eight-day Pride festival. Vallarta Gay Pride has escalated significantly since inception in 2013 as a hugely popular event, that is now held annually to coincide with US Memorial Day weekend.
THE BEACHES OF PUERTO VALLARTA IN FOCUS
Beaches are PV’s calling card. The two most central favorites include Los Muertos and Olas Altas, as the closest to the city’s main square. These are some of the most easily accessible spots for water sports and boat excursions.
From the 60-metre pier on Playa de Los Muertos, take a boat ride to head away from the crowds to the quieter southernmost reaches, where secluded coves boast pristine snorkeling sites. Some of the best are to be found near the villages of Yelapa, Quimixto and Playa Majahuitas – a favorite amongst scuba-divers.
Meanwhile, Playa Mismaloya is well-noted as an iconic stretch of sand, thanks to the beach’s appearance as the backdrop for the Richard Burton and Elizabeth Taylor film, the Night of the Iguana. The beach is also close to the remarkable Los Arcos Marine Park.
PV hosts some of the Pacific Coast’s best diving destinations, and this protected national marine park is one of the finest. Whether scuba diving, swimming, or snorkeling, enjoy waters teeming with marine life including moray eels and manta rays. Translating from the Spanish for ‘the Arches’, marvel at the vast grey granite islands rising from the sea.
Zona Romántica
One of PV’s most popular areas to explore, this cosmopolitan neighborhood is packed with restaurants, bars and coffee shops and truly comes alive at night time. By day, admire cobbled streets and a colorful arts and culture scene. On Saturday mornings, be sure to stop by the vibrant Farmer’s Market for artisanal local produce.
Botanical Gardens of Vallarta
The Vallarta Botanical Gardens encapsulate the tropical diversity of the Sierra Madre mountain range. A wander through the Cactus Garden, Tropical Fruit Orchard and the Orchid Conservatory – home to over 300 native Mexican species – offers an idyllic way to spend an afternoon. Stroll deeper into the forest and traverse a hanging bridge to explore the wilder side of these beautifully maintained grounds.
The downtown area is easily walk-able, offering atmospheric cobbled roads and quaint backstreets that are perfect for a wander. For those staying in hillside hotels, downtown beaches are still easily reached within walking distance. The mile-long boardwalk of the Malecón is dedicated to pedestrians and presents a sight-filled promenade that will lead you through the oceanfront highlights.
For further distances, PV has an efficient bus network to reach other resort towns. Many prefer not to rent a car here, since it can be a costly option, albeit offering comfort and convenience. Alternatively, ride-hailing service Uber is a reliably popular choice. While this is available for airport drop-offs, it is worth nothing that Uber drivers are not permitted to pick up arriving passengers, unless first exiting the airport and ordering one from the street.
PV’s principal airport is Gustavo Díaz Ordaz International Airport (PVR), which offers connections to other major cities throughout the country and direct flights from the US. It is also 205 miles (330km) from Guadalajara – the capital of Jalisco state – which has many connections with international cities.
