What Is Tequila , Exactly?
Tequila is a distilled spirit made exclusively from the Blue Weber Agave (Agave tequilana Weber azul), a succulent plant that takes 7–12 years to reach full maturity before it can be harvested. It is one of the most tightly regulated beverages in the world and one of the most misunderstood.

The Blue Weber agave grows in a specific region of Mexico, most abundantly in the red volcanic soil of Jalisco’s highlands and lowlands. When the plant is ready, workers called jimadores hand-harvest it by slicing off the spiny leaves with a sharp curved blade called a coa, revealing the piña — the dense, pineapple-shaped heart of the plant that can weigh anywhere from 40 to 200 kilograms.

Those piñas are slow-cooked in brick ovens or steam autoclaves to convert their starches into fermentable sugars. The cooked agave, juice aguamiel is then fermented and double-distilled to produce the clear, bold spirit the world knows as tequila.

Blanco
Also called Silver or Plata, Blanco is either unaged or briefly rested for less than two months — always in stainless steel, never in wood. It’s the purest expression of the Blue Weber agave: clean, bold, and honest.

Expect bright flavors of fresh agave, citrus, green pepper, and white flowers. It’s the foundation of classic cocktails like the Margarita and Paloma, and the best style for understanding raw agave character.

Reposado
Reposado means “rested.” This tequila spends between two months and one year in American or French oak barrels, picking up a golden hue and a richer flavor profile while keeping the agave at the forefront.

Look for notes of vanilla, caramel, toasted oak, and dried fruit. Reposado is widely regarded as the most versatile style — sippable neat, on the rocks, or in premium cocktails.

Añejo

Rich layers of toasted oak, chocolate, spice, leather, and dried cherry emerge from a well-made Añejo. These are sipping tequilas — poured neat in a snifter glass.

Extra Añejo

Expect dried fruit, tobacco, cinnamon, dark chocolate, and a long, warming finish. These are rare, often expensive, and always treated with reverence. Best enjoyed like a fine Cognac slowly, in good company.

Think of Mezcal as the grandmother of all agave spirits. It predates Tequila by centuries and is far more diverse. While Tequila is made exclusively from the Blue Weber agave and produced in specific states, Mezcal can be crafted from over 400 different agave varieties including wild-growing species like Tobalá, Tepeztate, and Espadin in nine authorized Mexican states.

The most dramatic difference is in production. Tequila’s piñas are steamed or cooked in brick ovens. Mezcal’s piñas are slow-roasted in underground earthen pit ovens lined with hot rocks and wood or charcoal. That roasting process creates Mezcal’s unmistakable smoky, earthy, complex flavor profile a taste that cannot be replicated.

You don’t shoot quality tequila. You savor it. Here’s how to experience the full spectrum of flavors in every pour.

Choose the right glass. A narrow-rimmed copita or a Riedel tequila glass concentrates aromas far better than a shot glass. For aged expressions, a tulip-shaped snifter works beautifully.

Observe the color. Blanco is crystal clear. Reposado gleams pale gold. Añejo deepens to amber. Extra Añejo can reach a rich, brandy-like mahogany. The color tells you the story of the barrel before the first sip.

Smell before you sip. Hold the glass a few inches from your nose, not pressed right in and breathe slowly. Let the alcohol settle and the aromas emerge: agave, citrus, flowers, vanilla, smoke, or earth. Take your time. Smell twice.

Sip, don’t shoot. Take a small sip and let it coat your palate. Notice the entry (sweet? spicy?), the mid-palate (fruit? oak? minerals?), and the finish (how long does the warmth last?). A quality Extra Añejo can linger for a full minute after swallowing.

Add a drop of water. Like whisky, premium tequilas open up beautifully with a single drop of still water. It lowers the proof enough to release volatile aromatics that alcohol was suppressing.
