Mark your calendars for January 28, as Hidalgo Park transforms into a vibrant celebration of these iconic seafood dishes. From 12 p.m. to 8 p.m., 14 restaurants compete with more than 60 unique takes on ceviche and aguachile, each vying for your taste buds and the coveted jury approval.

Forget manual versions! Puerto Vallarta ceviche is full of the unexpected: carrots, cucumber, cilantro, and local magic woven into every tangy bite. Aguachile, with its fiery name and its cooler counterpart, aguachile verde, will ignite your palate with pulverized chiles and lime-marinated shrimp.

More than 60 varieties of both specialties will be served with tostadas, providing a diverse seafood experience to an expected crowd of more than 3,000 people.
